Shahi Mutton Dalcha Recipe

Dalcha is traditionally served with the rice dish referred to as bagara khana.

Ingredients for Mutton Dalcha:


  • Ghee (2 Tsp)
  • Whole Spices (2 Tsp)
  • Chopped Onion (02)
  • Ginger Paste (1/2 Tsp)
  • Garlic Paste (1 Tsp)
  • Tomato Cubes ( 03)
  • Turmeric Powder (1/4 Tsp)
  • Red Chilli Powder (1 Tsp)
  • Salt (1 Tsp)
  • Chilli Flakes (1/2 Tsp)
  • Mutton Boneless (500 gm)
  • Bottle Gourd – Cubes (One)
  • Red Lentil (300 gm)
  • Water (500 ML)
  • Coriander Powder (1 Tsp)
  • Green Chilli (Four)
  • Cumin Seeds(1 Tsp)
  • Whole Spice Powder (1 Tsp)
  • Almonds (10-12) Boiled
  • Khoya (70 gm)
  • Milk (30 Ml)

Ingredients for Presentation:


  • Chopped Ginger, Coriander, Green Chilli
  • Crushed Almonds
  • Khoya

Ingredients for Tempering :


  • Vegetable Oil (50 ML)
  • Garlic Paste (1/2 Tsp)
  • Dried Red Chilli (10-12)

Prepare the Nuts Paste :


To make the paste take boiled almonds, khoya and milk. Put them in the grinder and make a thick paste out of it. Then keep it aside.

Directions for How to Make Dalcha:


1Turn the flame on and put your clay pot on it and heat it. Add ghee and let it swirl all around the pot. Then add whole spices (Garam masala) to it.

2Add the finely sliced onions to the pot and cook until they turn light brown. Once the onions are soft, light golden; add cubes of tomatoes to it. Cook the mixture for about 3- 4 minutes until the rawness of onions and tomatoes is gone.

3 Its time for the best part of mutton dalcha and that is “The spices”. Add the ginger-garlic paste you made earlier and with it add all your spices (turmeric powder, salt, chilli flakes) and mix it well.

4Make sure each element is mixed well with each other. You surely don’t want the spices to not incorporate with vegetables at this point.

5Bring the mutton in. Before adding the mutton into the pot, make sure that you clean the mutton with a moist towel. Do not wash it, just pat dry it.

6 Now cook the mutton in the pot with the existing batter till the mutton soaks all the spices and flavours. Wait till the mutton is cooked and oil begins to separate from it. This will add deep flavor to the mutton.

Add bottle gourd cubes to the pot. Cook it for about 2-3 minutes. Wait till the upper layer and sides of the cubes get slightly soft, and squishy. This way the bottle gourd will absorb spices too.

8 Now add the red lentils to the pot and mix it well. Cook the lentils for about 5 minutes on low flame and then add water to the pot. Make sure all the mutton, lentils and bottle groud cubes are fully soaked in the water. Cover the lid of the pot and let it simmer for 30 minutes.

9 Again it’s time for the spices, add coriander powder, green chilli, cumin seeds and whole spice powder according to the above-mentioned quantities. Now cook it for 12-15 minutes and mix it well.

Remember the nuts paste we made at the beginning, it’s now that we bring it in action. Add the paste to the mud pot and incorporate everything nicely. The mutton dalcha is now ready..

Tempering


No shahi dish is complete without tempering. Take a pan, heat it on low flame and add vegetable oil to it. Then add the garlic paste and dried red chilli and sauté it until it turns brown and the aroma is spread everywhere. Pour it over the sizzling mutton dalcha. 

Garnishing


You surely need to garnish this mouthwatering dish. For that purpose, garnish it with chopped ginger, coriander, green chilli, crushed almonds and khoya.

Serve this heavenly made meatish dish with rice, roti or naan.
